The ubiquitous stock

Pork with preserved mustard

Dried scallops, lotus roots and Chinese cabbage. Needed something with a clean palate to counter the spice in other dishes.

Kim Chi Soup with mince pork

Making tofu. I needed my tofu to be the consistency i desired for effect.

Have you ever had tofu so soft you could suck it through your teeth?
